Peking Duck: Beijing Roast Duck

Peking duck which in Chinese is known as Pinyin is a traditional food in China originating from Beijing. Peking duck is also found in Taiwan, brought by the Kuomintang nationalist government that lost the civil war and retreated to Taiwan in 1949. At first the ducks used were ducks from the city of Nanjing. But because there has been a fairly rapid development in Peking, gradually the ducks began many farms in Peking so that finally more popular with the term peking duck.

Peking duck is deliberately formulated by the palace chef so it feels more special to be served as a dinner. Tasty taste with a soft texture makes peking duck very suitable made a side dish. On farms in China, they deliberately restrict the peking duck livestock space and are fed more so that these animals are more easily obese.

Peking duck is made using a special duck meat farmed for this food. Ducks are fattened by providing nutritious food, when the ducks are full, the farmers may feed the food into the throat of the duck by force. Then it makes peking duck also known by the name of fat duck. The duck was served after being roasted with special firewood that will add the scent of roasted duck meat.

First the duck is cleaned, then it is 10 minutes minced with salt water and Chinese spices. Afterwards the duck is boiled, then stained with sugar. After that, the duck drying process is hung for a whole day at room temperature before it is finally baked. The method of serving this food is the skin is served dipped in sugar and garlic sauce. Generally, the meat is then served with steamed pancakes, sweet bean sauce and spring onions. Some vegetable dishes are also usually provided to accompany the meat, such as cucumber sticks, while the pancake is wrapped by meat with the vegetables.
