Soto: Indonesian Yellow Chicken Soup

Soto (also known as tauto, sroto, or coto) is a traditional Indonesian soup composed of broth, meat and vegetables. The most commonly used meat is beef and chicken, but some use pork or goat meat. Various regions in Indonesia have different soto each region with different composition, such as soto Madura, soto Kediri, soto pemalang, soto Lamongan, soto Jepara, soto Semarang, soto Kudus, soto Betawi, soto Padang, soto Bandung, sroto Sokaraja, soto Banjar, soto Medan, and coto Makassar. Soto is also named according to its content, such as soto ayam (chicken soto), soto babat (tripe soto), and soto kambing (goat soto). It is an Indonesian equivalent of chicken, tripe, or goat soup. There is a soto made from cow leg meat, called soto sekengkel.

Soto serving method is different according to the uniqueness of each region. Soto usually served with rice, lontong, ketupat (rice cakes), noodles, or vermicelli accompanied by various kinds of side dishes such as crackers, potato cakes, chips, chili sauce, and peanut sauce. There are also add quail eggs, clam satay, lime, and koya. Because it is always served warm with soft texture, it is considered as Indonesian comfort food.

The ingredients of soto include bihun or sohun (rice vermicelli), mung bean sprouts and scallion. Common soto spices include turmeric, shallots, galangal, coriander, garlic, ginger, candlenut, salt and pepper. The color, and consistency of soto soup can vary according to each recipe. Soto can have a light broth just like soto bandung, but there is also a yellow transparent broth (coloured with turmeric) like in soto Banjar and soto ayam (chicken soto), or a rich coconut milk just like in soto madura, soto betawi, and soto kaki.

The staple food of the Indonesian people is rice, so soto is usually served with rice as the main menu. However, there is a difference in terms of the main menu of rice. Most soto are served separately with rice, such as soto betawi, soto Padang, and others. However, there are also served along with rice or soup mixed with rice, such as soto Kudus. In addition, there is also soto served with lontong or ketupat (rice cakes), such as coto Makassar. Then, there is also wearing noodles, and not rice as the main menu, such as soto mie Bogor.
