Kerak Telor: Betawi Traditional Spicy Omelette Dish

Kerak telor is the original food of Jakarta, Indonesia. It is a Betawi traditional spicy omelette dish in Indonesian cuisine with the ingredients of glutinous rice cooked, egg (chicken or duck, but duck eggs are considered more delicious), edi (dried shrimp) that roasted with fried onions, then spiced with coconut, roasted chilli, ginger, pepper, salt and sugar. Kerak telor is considered as a snack and not as a main dish.

There is a unique way of cooking kerak telor. The egg is inserted into the pan without oil, when the egg is half cooked, the pan will be reversed to face the charcoal heat from the brazier and then let it become the crust. After the egg surface is slightly burned, the egg crust is removed from the pan and seasoned, then ready to serve. Kerak telor does not use stove, but uses brazier and charcoal. How to cook with this brazier is used to maintain a distinctive taste of a tasty and legit egg crust.
